
with the cooler temperatures making their way through my open window last night, i woke up seriously craving a pumpkin spice latte! i considered getting myself together to drive over to a starbucks, but i decided to make do with my own handy work and whip up something that at least resembles the pumpkin-ey goodness this coffee concoction brings to me every fall. mine didn't turn out quite as sweet and creamy as the coffee shop counterpart, but i do have a wee little taste of fall in my mug this morning. i found the best recipe for homemade pumpkin spice latte over on apartment therapy's kitchn -
From the kitchn:
Pumpkin Spice Latte
makes 1-2 servings
Ingredients:
2 cups milk
2 tablespoons canned pumpkin OR 1 teaspoon of Torani Pumpkin Spice Syrup (your choice)
2 tablespoons sugar or sugar substitute - you can halve this amount
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)
Directions:
In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don't have a blender, don't worry about it - just whisk the mixture really well with a wire whisk.
Pour into a large mug or two mugs. Add the espresso on top.
Optional: Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

ok, so, i wish my cup had all these fab ingredients in it, but, with it being only august, i didn't happen to have pumpkin puree hangin' around, nor did i have pumpkin pie spice, specifically, so here's a substitue for pumpkin pie spice, just in case you're like me: 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground cloves, 1/4 teaspoon ground ginger - makes a little over 1 teaspoon.
the version i've got kind of reminds me of a pumkin flavored coffee, which is just right for a coolish, indian summer type day like today :)
